Proponents of Olive oil adds the following:

The oleic acid in olive oil is a monounsaturated fat, that lower "bad cholesterol" and raise the level of "good cholesterol". Extra virgin olive oil has the highest percentage of monounsaturated fat of any other type of oil.

Extra virgin olive oil also contains significant amounts of provitamin A, and vitamins E. Provitamin A and vitamin E act in the body as antioxidant agents. Among other things, these antioxidants work to prevent the oxidation of LDLs ("bad cholesterol"). When LDLs are oxidized they accelerate cell and artery damage that leads to cancer and heart disease. Antioxidants may also provide defense against the oxidative effects that accompany aging, thus maintaining mental faculties and muscular control better and longer.
